Iced tea ratio and how to make it
For iced tea, brew double strength and dilute with ice: steep about 15 g of loose black tea (or 6–8 standard bags) in 500 ml of boiling water for 4–5 minutes, strain, then add 500 g of ice or cold water. That gives one litre. For sweet tea, stir in sugar while the concentrate is still hot.
Why iced tea needs more leaf
Iced tea is diluted twice: once by the ice that melts, and once by your taste buds, which perceive flavour and sweetness less strongly when a drink is cold. A normal cup ratio of about 1 g per 80 ml tastes thin once poured over ice. The standard trick is to brew a concentrate at about double strength and let the ice bring it back to drinking strength.
Iced tea ratios
| Tea | Loose leaf | Bags | Hot water | Steep | Then add |
|---|---|---|---|---|---|
| Black tea (Ceylon, Assam) | 12–15 g | 6–8 | 500 ml at 100 °C (212 °F) | 4–5 min | 500 g ice / cold water |
| Green tea | 10–12 g | 5–6 | 500 ml at 80 °C (176 °F) | 2–3 min | 500 g ice |
| Earl Grey | 12 g | 6 | 500 ml at 100 °C (212 °F) | 4 min | 500 g ice |
| Hibiscus / fruit | 15–20 g | 6–8 | 500 ml at 100 °C (212 °F) | 8–10 min | 500 g ice |
Bag counts assume standard bags of about 2 g; check your box. For other volumes, just keep the ratio: per 250 ml glass, about 3–4 g of black tea in 125 ml of hot water plus 125 g of ice.
How long to steep black tea for iced tea
4–5 minutes in boiling water. Longer than for a hot cup, because you want a strong concentrate, but not much longer: after about 6 minutes the extra time adds bitterness, not strength. If you want it stronger, add leaf. More on this in why tea turns bitter.
Southern sweet tea
Sweet tea, the iced tea of the American South, is brewed strong and sweetened while hot so the sugar dissolves fully. Recipes vary widely, but a common pattern is:
- Bring 1 litre of water to the boil, remove from heat and add about 6 standard black tea bags (or 12–15 g loose).
- Steep 5 minutes, remove the bags without squeezing.
- Stir in sugar while hot: around 50–100 g per litre of finished tea, depending on how sweet you like it. Traditional versions can be sweeter.
- Add 1 litre of cold water, cool, then refrigerate. Serve over ice with lemon.
Some Southern cooks add a small pinch of baking soda while steeping, which is said to soften bitterness and reduce cloudiness. It’s optional.
Why is my iced tea cloudy?
Cloudiness, sometimes called “creaming”, happens when caffeine and polyphenols bind together and come out of solution as hot strong tea cools quickly. It is harmless but looks dull. To keep it clear:
- Let the concentrate cool to room temperature before refrigerating.
- Use softer or filtered water; hard water makes it worse.
- Choose teas known for clear iced tea, like Ceylon.
- Or switch to cold brew, which almost never clouds.
How long does iced tea keep?
Keep it covered in the fridge and drink it within about two days. If it tastes sour or looks stringy, throw it away.
Flavour ideas
- Lemon slices and a handful of fresh mint
- Peach slices steeped in the cooled tea for an hour
- Half black tea, half peppermint
- Green tea with ginger and honey
To scale any of these, the calculator gives hot-brew amounts; double the leaf for the concentrate.
Frequently asked questions
What is the ratio of tea to water for iced tea?
About 12–15 g of loose black tea, or 6–8 bags, per litre of finished iced tea. Brew it in half the water at double strength, then add the other half as ice.
How long to steep black tea for iced tea?
4–5 minutes in boiling water. Longer mainly adds bitterness.
How much sugar is in sweet tea?
Recipes vary; around 50–100 g of sugar per litre is a common range, and traditional versions can be sweeter. Dissolve it while the tea is hot.
Why does iced tea get cloudy?
Caffeine and polyphenols bind and come out of solution when strong tea cools fast. Cool it slowly, use softer water, or cold brew instead.
